Pasta Fagioli
These pictures are from Olive Garden but I have made the soup from a recipe I got from Dom Deluise. Let me tell you, if you want to learn how to cook well learn from a fat Italian!

Add a little cheese...

Let it melt a little...

Serve with breadsticks and salad...
Here is my recipe...
- 4 garlic cloves, minced
3 tablespoons olive oil
2 ounce can tomato sauce
1.5 cup water
2 16-ounce can cannellini beans
2 pound ditalini or elbow macaroni, cooked al dente
1lb lean ground beef, crumbled and browned
Freshly grated Parmesan cheese to taste for garnish
Black pepper to taste
- In sauce pan, fry garlic gently in oil until golden brown. Add tomato sauce and water; simmer for 10 minutes. Add beans, cook 5 minutes more.
Add ditalini or elbow macaroni; add browned ground beef; stir gently, continue to simmer until flavors have assimilated. If it gets too thick, add a little more water. Sprinkle with grated cheese and black pepper, if desired.
Serve immediately, or pasta will absorb all the liquid.

that looks good I so miss the olive garden. mmmm I'll have to try making the soup.
