Pasta Fagioli

These pictures are from Olive Garden but I have made the soup from a recipe I got from Dom Deluise.  Let me tell you, if you want to learn how to cook well learn from a fat Italian!

The best soup. Ever.

Add a little cheese...

Let it melt a little...

Serve with breadsticks and salad...

MMMmmmmmmmmmm!

Here is my recipe...

    4 garlic cloves, minced
    3 tablespoons olive oil
    2 ounce can tomato sauce
    1.5 cup water
    2 16-ounce can cannellini beans
2 pound ditalini or elbow macaroni, cooked al dente
1lb lean ground beef, crumbled and browned
Freshly grated Parmesan cheese to taste for garnish
    Black pepper to taste
In sauce pan, fry garlic gently in oil until golden brown. Add tomato sauce and water; simmer for 10 minutes. Add beans, cook 5 minutes more.

Add ditalini or elbow macaroni; add browned ground beef; stir gently, continue to simmer until flavors have assimilated. If it gets too thick, add a little more water. Sprinkle with grated cheese and black pepper, if desired.

Serve immediately, or pasta will absorb all the liquid.
